Carden Park launches Fine Dining experience – here’s what we thought

Truly beautiful.

These are the only words we can use to describe Carden Park Hotel and Spa.

It gives visitors a taste of luxury and class and is just a short drive from Chester city centre.

You have plenty of time to view the grounds during the four-minute drive from the gate to the entrance.

The manor is nestled within stunning greenery making it a perfect backdrop for romantic getaways and weddings.

Carden Park Hotel already has a restaurant serving delicious meals at the Redmond’s building, with gorgeous views of the gardens and water fountains.

Now it’s welcoming diners to The Vines at Carden, which is part of a £250,000 refurbishment this year.

The Fine Dining addition brings elegant cuisine to Cheshire’s 1000-acre luxury resort and diners can experience a contemporary, yet relaxed evening atmosphere.

Executive Chef Graham Tinsley MBE along with Head Chef Harri Williams have formulated a classic à la carte menu inspired by locally-sourced British ingredients.

The gourmet dining experience includes impeccable service, fine wines and an ambiance that expertly complements the natural character of the cuisine.

We were so excited to be invited to experience a night at The Vines restaurant.

In all honesty, it was extremely difficult to fault.

We had such a gorgeous evening

“When choosing we both had different tactics, I wanted something I’m familiar with, while Gemma wanted to try something completely new,” said Stacey.

“Although we both chose different starters (Chicken Liver Mousse with a port and bacon jam served on apricot brioche and Pan Seared scallops with a summer pulse tortellini asparagus and caviarcream sauce) we were both truly satisfied.

Straight away we could tell how high the level of exquisite dining was to come.

Pan seared scallops

With a talented mixologist on the bar on hand to bring us our Singapore Sling’s cocktails on tap, we moved onto the main course.

We went for the same dish, the Lemon Sole, which was delicious – it was a perfect portion and extremely flavourful.

The delicate fish was accompanied with gnocchi and butter sauce with fresh vegetables.

Lemon Sole, main dish

There was even a surprise inside the fish – shrimps in a creamy sauce.

We had such a lovely catch up as great friends who had not seen each other face to face since the first lockdown.

It was so nice to be able to sit, relax and enjoy our surroundings.

The decor of The Vines restaurant

The restaurant has a nostalgic feel to it, a slightly dated look to its carpet and menus but we found it balanced nicely with the contemporary, fresh clean lighting and panelled walls.

The carpet is very 80s, with mahogany furniture accents throughout and on the window displays there is unusual décor – queue James Bond memorabilia – but still, it has all the modern bits needed to make it look Instagram worthy.

Now for the desserts… have you ever seen a dish more beautiful.

The desserts looked like a piece of art

Here is Gemma’s choice, the Vanilla Panna cotta with pistachio nut sponge, raspberry sorbet, lemon balm and a Champagne and raspberry consommé.

“It would have been gone in seconds if we weren’t in a posh restaurant, bowl licked and everything,” said Gemma.

This place is perfect for a birthday, anniversary or a romantic date night.

The Vines scored 5/5 from both of us and this is absolutely based on the ambience, the staff which were so attentive to our needs, and of course the level of perfection served to us from the kitchen.
